Chicken Shiitake San Choy Bow Boats | Lorna Jane Clarkson

Serves 2  /  Prep Time: 10 Mins  /  Cooking Time: 15 Mins


  • 400g organic chicken mince
  • 40g shiitake mushroom soaked and chopped
  • 2 garlic, crushed
  • 1 thumb ginger, grated
  • 4 shallots, finely sliced
  • 1 carrot, diced
  • 4 stems coriander, finely chopped and leaves set aside
  • 1 teaspoon dried coriander
  • ½ teaspoon cumin
  • 2 teaspoons white sesame seeds
  • 1 teaspoon black sesame seeds
  • 2 tablespoons tamari
  • 1 tablespoon maple syrup
  • 2 tablespoons coconut oil
  • coriander leaves to garnish
  • scliced spring onions to garnish
  • cos lettuce cups to serve


In a fry pan, heat half the coconut oil over medium heat and sauté shallots, garlic, ginger, carrot, coriander stems and shiitake mushrooms and cook for 2-3 minutes. Remove from pan. Add remaining coconut oil and fry chicken mince in batches for 5-7 minutes until golden. Add garlic mixture back into pan with chicken and all remaining ingredients and stir-fry for four minutes. Serve mixture in firm lettuce cups.
