Tucked among olive groves, citrus trees and wild mountain air, Son Brull is a deeply rooted sanctuary where heritage, architecture and terroir merge with quiet elegance. Originally a 12th-century Jesuit monastery, it is one of Mallorca’s most iconic conversions, an exemplar of contemporary hospitality woven into the rural soul of the island.

Owned and reimagined by the Suau family, Son Brull occupies 100 acres of agricultural land near Pollença, at the foot of the Serra de Tramuntana. The surrounding landscape – dotted with almond trees, ancient stone walls and vineyard rows – grounds the hotel in a natural rhythm that guides its approach to design, dining and wellness.

Heritage has not been restored here; it has been reinterpreted with care, reverence and architectural clarity. The interiors draw on a palette of raw oak, rusted iron, black-tinted concrete and local pebbles – materials that echo the monastery’s past while giving shape to a minimalist language of today.

At the heart of this property is a deep-rooted commitment to sustainability that long precedes current trends. An organic farm, olive oil production, vineyards, and an in-house gin distillery all support the hotel’s 365 Restaurant – a seasonal, hyper-local dining experience curated by chef Andreu Segura.

Original arches and beamed ceilings remain intact, forming a tactile dialogue between eras. Barcelona’s Forteza+ Aparicio led the initial design work, while Estudio Carme Pinós later expanded the property with a set of sleek villa suites and a wellness wing that enhances the estate’s architectural rhythm.

 

Miguel, Mar and Alex Suau are not merely innkeepers; they are stewards of place. Their vision, grounded in authenticity and creative foresight, ensures that Son Brull remains personal, timeless and deeply Mallorcan. Every space carries a sense of intention, from the understated luxury of the rooms to the curated experiences that celebrate the island’s cultural depth.

Menus blend traditional Mallorcan flavours with contemporary technique, where wild herbs and orchardfruits meet the precision of fine dining. The former olive press now hosts a bar that pays homage to its past, serving house-distilled citrus gin and estate wines in the glow of heritage stone.

 

Wellness, too, is shaped by the landscape. Treatments incorporate local ingredients like flor de sal and Tramuntana botanicals, while the hammam, hydro-massage pool and open-air zones invite a slower pace. Movement and nature are intertwined – guests stretch into sunrise yoga beneath olive branches, cycle through mountain trails, or swim in nearby coves.
