This is a great dish to serve at a gathering. It doesn’t take a lot of preparation, but it tastes divine and you can impress family and friends. It can be cooked on a barbecue, too, so it is perfect for easy summer entertaining.

Ingredients
1 whole fish (deboned)
Marinade
1 tsp chilli powder
1 tsp paprika
1 tsp ground coriander
1 tsp ground cumin
½ tsp ground black pepper
½ tsp salt
1–2 cloves garlic, crushed
1/3 cup olive oil
a good squeeze of lemon juice
1 tbsp tomato passata
Method
Mix everything together and spread over the fish. Marinate in the refrigerator for 30 minutes.
Preheat oven to 180°C.
Place the fish on an oven tray, cover the fish with a large piece of foil and bake for 20–25 minutes or until fish is opaque. Take off the foil to crisp and brown the fish for a further 5–10 minutes.
Remove from the oven. Serve with lemon wedges and homemade chips. Perfect!
