MAKES 1 LARGE LOAF
Slightly less water than the tattooed recipe on my foot (IYKYK), because first-timers find it harder to work with a wetter dough. As you get the knack of this, you should try to increase your water to 4 cups.

Ingredients
4 cups flour
3 teaspoons active dry yeast 3 cups water
1 tablespoon Sunshine Salt 2 tablespoons olive oil 1 teaspoon Sunshine Salt
for topping Handful of rosemary (optional)
Method
1. Place the flour in a large bowl, add the yeast and mix together.
2. Pour in the water and mix with a spoon to form a wet dough. Leave to sit for about 10 minutes.
3. Add 1 tablespoon Sunshine Salt and give it a quick mix, drizzle the top with the olive oil and set aside for half an hour.
4. Clear and clean your bench. Drizzle generously with oil to stop the dough sticking. Pour the dough out onto the bench.
5. With oiled hands, complete the first stretch and fold. Stretch the dough out into a rectangle as wide as you can.
6. Then take the side and fold it towards the centre, repeat with the other side. Imagine folding a landscape piece of A4 paper into thirds (this is also known as a blanket fold).
7. Repeat the fold vertically now by folding the bottom up towards the centre and then the top down towards the centre.
8. Pop the folded dough back into the bowl and leave to rest for 30 minutes before repeating the above folds two more times with 30 minutes in between for a total of three stretch and folds.
9. Preheat the oven to 220°C fan bake.
10. Oil your baking tray and place the folded dough in the centre and give it a gentle stretch on the tray, trying not to pop any air bubbles. Leave for another 20–30 minutes for a final rise.
11. Once risen, the dough should mostly fill the tray. Drizzle generously with olive oil and sprinkle with 1 teaspoon Sunshine Salt. The dough should be very jiggly.
12. Now using your fingers press down into the dough to create small divots all over the dough.
13. Pop in the oven for 18–20 minutes. Enjoy!
Recipe notes
When I do a huge slab I work with 3kg of flour to 2.5 litres of water and 70g yeast and 60g of salt if you ever want to do the big boy one!
